Puffed Rice Upma (Murmura Upma)
A quick and easy breakfast, Puffed Rice Upma (Murmura Upma) makes for an ideal dish on busy weekday mornings. This South Indian delicacy uses puffed rice, a popular ingredient in Indian street food such as Bhel Puri. You can enjoy it as a light breakfast or a savory snack.

Ingredients:

  • 6 cups Puffed rice
  • 1 tablespoon Oil
  • 1/2 teaspoon Mustard seeds (Rai/ Kadugu)
  • 1/2 teaspoon Cumin seeds (Jeera)
  • 10 Curry leaves, roughly torn
  • 1 Ginger, grated
  • 1/4 cup Raw Peanuts (Moongphali)
  • 1 Onion, finely chopped
  • 2 Green Chillies, finely chopped
  • 1/4 cup Green peas (Matar), steamed
  • 1/4 teaspoon Turmeric powder (Haldi)
  • 1 Tomato, roughly chopped
  • 2 tablespoons Lemon juice
  • 1 tablespoon Coriander (Dhania) Leaves, finely chopped
  • Salt, as needed

Preparation Time: 10 minutes
Cooking Time: 20 minutes

Instructions:

  1. Rinse the puffed rice under running water for about 30 seconds, then place it in a bowl to drain off the excess water. If you prefer a crunchy texture, skip the washing step and use the puffed rice directly.
  2. Heat a heavy-bottomed pan or kadai and add 1 tablespoon of oil on medium heat. Once hot, add mustard seeds and let them crackle. Then, add cumin seeds and raw peanuts. Roast the peanuts on medium heat until they give off a roasted aroma and become crispy.
  3. Next, add grated ginger, finely chopped onions, green chillies, and curry leaves. Sprinkle a pinch of salt and sauté the mixture until the onions turn transparent.
  4. Add steamed green peas, turmeric powder, and chopped tomatoes. Cook the mixture for 5 minutes or until the tomatoes soften.
  5. Stir in the puffed rice (Murmura), chopped coriander leaves, and lemon juice. Mix everything thoroughly. Taste and adjust salt and spice levels to your preference.
  6. Serve your Puffed Rice Upma as a quick breakfast or a light tea-time snack, perfect for guests or family. Pair it with a cup of Kesar Chai, a delicious saffron-flavored Indian tea.
