Description:
This Corn and Drumstick Leaves Salad is an unusual yet delicious combination. Sweet and spicy, it pairs corn kernels with drumstick leaves sautéed together in a healthy dressing. This simple dish is packed with flavor and nutrients, making it a great addition to your meal!


Ingredients:

  • 100 grams Del Monte Whole Corn Kernels
  • 2 cups Drumstick Leaves (Moringa/Murungai Keerai)
  • 1/2 teaspoon Cumin seeds (Jeera)
  • 1/4 teaspoon Mustard seeds (Rai/Kadugu)
  • 1/4 teaspoon Red Chilli powder
  • 1/4 teaspoon Turmeric powder (Haldi)
  • 1 teaspoon Jaggery (powdered)
  • 1/4 cup Water
  • 2 teaspoons Oil
  • Salt, to taste

Instructions:

  1. Prep: Rinse the corn kernels and clean the drumstick leaves thoroughly.

  2. Sauté: Heat oil in a heavy-bottomed pan on medium heat. Once hot, add cumin seeds and mustard seeds. Reduce the heat to low once the mustard seeds start to splutter.

  3. Add Corn: Stir in the corn kernels and sauté for about 2 minutes.

  4. Spices: Sprinkle in the turmeric powder, red chili powder, and salt. Stir well to coat the corn with the spices.

  5. Add Leaves: Add the drumstick leaves and sauté until they shrink and combine well with the corn mixture.

  6. Sweeten & Simmer: Adjust the salt and add powdered jaggery. Add water and simmer on low heat until the drumstick leaves are soft and the corn is tender.

  7. Serve: Once done, turn off the flame and serve this healthy and flavorful Corn and Drumstick Leaves Salad as part of a nutritious weekday lunch. Pair it with Rasam, Cabbage Poriyal, and Rice for a complete meal!
