Ingredients

  • 1-1/2 cups Rice Vermicelli Noodles (Thin)
  • 1 Onion, sliced
  • 1/2 cup Carrots (Gajjar), chopped
  • 1/3 cup Green peas (Matar)
  • 2 Green Chillies
  • 1/4 teaspoon Asafoetida (Hing)
  • 1 teaspoon Mustard seeds (Rai/ Kadugu)
  • 1 teaspoon White Urad Dal (Split)
  • 1 teaspoon Ghee
  • 1 sprig Curry leaves
  • Salt, to taste
  • 1 teaspoon Lemon juice

Instructions

  1. Steam the Ragi Vermicelli: Begin by steaming the ragi vermicelli in a rice cooker or steamer for about 5-6 minutes, or until cooked but firm. Once done, keep it aside. Optionally, mix in a few drops of oil to prevent the vermicelli from sticking together.

  2. Prepare the Tempering: Heat a kadai or wok, and add ghee or oil. Once warm, add asafoetida (hing) and let it sizzle for about 30 seconds. Follow with mustard seeds, urad dal, and curry leaves. Allow them to crackle for a minute, ensuring the dal turns lightly browned.

  3. Cook the Vegetables: Add the sliced onions and sauté until they turn translucent and soft. Then, add the green chillies, parboiled carrots, and peas. Season with salt and cook for 2-3 minutes, or until the vegetables are partially cooked.

  4. Combine the Vermicelli and Vegetables: Add the steamed ragi vermicelli to the vegetable mixture. Toss everything together gently to ensure the vegetables are evenly mixed with the vermicelli.

  5. Finishing Touch: Turn off the heat, transfer the upma to a serving dish, and drizzle with lemon juice. Mix well and serve hot with coconut chutney and a cup of coffee or tea for a nourishing breakfast experience.
