Ingredients:
- 250 grams Dates (pitted and roughly chopped)
- 1 tablespoon Ginger (paste)
- 1 tablespoon Garlic (paste)
- 4 Green Chillies (finely chopped)
- 1/4 teaspoon Turmeric powder (Haldi)
- 1 tablespoon Red Chilli powder
- 3 tablespoons Vinegar
- 1 teaspoon Mustard seeds (Rai/Kadugu)
- 1/4 teaspoon Asafoetida (Hing)
- 1 tablespoon Sugar
- 2 tablespoons Oil
- 1 sprig Curry leaves
- Salt, to taste

Instructions:
- Begin by removing the seeds from the dates and roughly chopping them. Set aside.
- Heat oil in a wide pan. Add mustard seeds and allow them to splutter. Then add asafoetida and curry leaves, letting them splutter as well.
- Add the ginger, garlic paste, and chopped green chillies. Sauté until the raw smell disappears.
- Stir in turmeric and red chilli powder. Mix well.
- Add the chopped dates to the pan and cook until the dates become soft.
- Season the pickle with salt and sugar. Sauté for an additional minute until the seasoning is well incorporated.
- Pour in the vinegar and simmer until the pickle thickens and comes together. Then switch off the heat.
- Serve the Malabar Style Dates Pickle with Parathas for a delightful breakfast or enjoy it alongside Vegetable Biryani and Papadam for a flavorful weekend lunch.
