Ingredients:

  • 2 avocados
  • 5 cloves garlic, chopped
  • 1-inch piece ginger, chopped
  • 1 onion, chopped
  • 10 fresh mint leaves
  • Olive oil (as needed)
  • Water (as needed)
  • 2 fresh red chillies

Preparation Time: 5 minutes

Instructions:

  1. Heat a little olive oil in a saucepan over medium heat. Add the chopped garlic, red chillies, and onion. Sauté until the onion softens and becomes translucent. Once cooked, set the mixture aside to cool.

  2. In a blender, combine the avocado and the cooled onion mixture. Blend until smooth.

  3. Transfer the blended avocado mixture into the saucepan. Add salt to taste and water as needed to achieve your desired soup consistency. Allow the soup to come to a gentle boil over low heat.

  4. While the soup is simmering, prepare the mint mixture. In a mortar and pestle, add 1 teaspoon of olive oil and the fresh mint leaves. Grind it into a paste.

  5. Once the soup has boiled, turn off the heat. Stir in the mint paste and mix well.

  6. Serve your Avocado Mint Soup hot with garlic bread and a salad of your choice for a complete meal.
