Ingredients
- 3/4 cup Basmati rice
- 1/2 cup Badi (Wadi)
- 2 Green chillies, finely chopped
- 1 sprig Curry leaves
- 1 tablespoon Chana dal (Bengal gram dal)
- 1 tablespoon White urad dal (split)
- 1 teaspoon Mustard seeds (Rai/Kadugu)
- 1/2 teaspoon Turmeric powder (Haldi)
- 1/2 teaspoon Lemon juice
- 1 pinch Asafoetida (Hing)
- Salt, to taste
- Oil, for cooking

Instructions
- Soak the Rice: Wash and soak the Basmati rice for 10 to 15 minutes.
- Fry the Wadi: Heat 2 tablespoons of oil in a wok or kadai and stir-fry the wadi until golden brown. Once done, remove the wadi from the oil and set it aside.
- Prepare the Tempering: In the same wok, heat 1 teaspoon of oil. Add mustard seeds, urad dal, and chana dal. Fry until the dals change color and become aromatic.
- Add Spices: Stir in asafoetida, green chilies, and curry leaves. Sauté for a few seconds.
- Combine Rice and Wadi: Add the fried wadi, soaked rice, and salt to the wok. Mix well.
- Cook the Pulao: Add 2 cups of water to the pan. Bring to a brisk boil. Once boiling, lower the heat, cover, and let it cook until all the water is absorbed and the rice is tender.
- Rest the Rice: Turn off the heat and let the rice rest for another 10 minutes.
- Final Touch: Stir in 1 tablespoon of ghee and lemon juice.
