  • 1/2 tsp Asafoetida (hing)
  • 1/2 tsp Turmeric powder (haldi)
  • 1 tbsp Oil, heated
  • Salt, to taste
  • Water, as required to make a thick batter

Cook Time: 20 minutes

Instructions:

  1. Prepare the Bitter Gourd: Slice the bitter gourd and remove any large seeds. If the seeds are tender, leave them in. Sprinkle some salt on the slices and let them sit for 15-20 minutes to draw out the bitterness. Afterward, rinse the slices under water and discard the liquid.

  2. Make the Batter: Preheat your oven to 200°C (390°F). Line a baking sheet with parchment paper. In a mixing bowl, combine the gram flour, rice flour, torn curry leaves, red chili powder, asafoetida, turmeric powder, and salt. Add the heated oil and mix. Gradually add water to form a thick batter.

  3. Coat the Bitter Gourd: Dip each bitter gourd slice into the batter, ensuring each piece is fully coated.
