This Corn and Capsicum Sandwich is an easy-to-make recipe perfect for breakfast. It’s quick to prepare, requiring less than 30 minutes. You can also serve it as an evening snack with tea. This sandwich is a great option for kids to enjoy after school as a tasty snack.
Ingredients:
- 1 cup sweet corn (steamed)
- 1 green capsicum (finely chopped)
- 1/2 tbsp black pepper powder
- 1/2 tbsp red chili flakes
- 2 sprigs fresh coriander (finely chopped)
- 1/4 cup cheese (grated)
- 8 slices bread
- Butter (as needed)
- Salt (to taste)

Instructions:
- In a bowl, combine the steamed sweet corn, chopped capsicum, black pepper powder, red chili flakes, fresh coriander, and grated cheese. Mix well.
- Spread butter on the slices of bread.
- Place the corn and capsicum mixture on one slice of bread and cover it with another slice.
- Apply butter on both sides of the sandwich.
