This Asian-style chicken noodle soup is perfect for cold weather, offering a flavorful and comforting meal. The chili sauce adds a burst of spice, making it even more delicious. If you’re vegetarian, you can replace chicken with tofu for a plant-based version.

Ingredients:

  • Chicken (boneless): 1/2 kg
  • Cloves (long): 10
  • Ginger: 2-inch piece, finely chopped
  • Lemon juice: 1 tbsp (or rice vinegar)
  • Soy sauce: 1 tbsp
  • Red chili sauce: 1 tbsp
  • Black pepper powder: 1 tsp
  • Green onions: A few, chopped
  • Onion: 1, chopped
  • Udon noodles: 500 grams (or soba noodles)
  • Salt: To taste
  • Water: 5 cups

Prep Time: 10 minutes

Cook Time: 20 minutes

Instructions:

  1. Begin by rinsing the chicken thoroughly and draining off excess water. In a saucepan, bring water to a boil. Add the cloves and chicken, then cook until the chicken is tender (about 10-12 minutes).
  2. Once cooked, remove the chicken and set aside. Discard the cloves.
  3. Let the chicken cool and shred it using your hands or a fork.
  4. In a separate saucepan, combine the chicken broth, ginger, chopped onion, and shredded chicken. Bring it to a boil.
  5. Add black pepper powder, lemon juice (or rice vinegar), red chili sauce, and soy sauce. Stir well and allow it to simmer for 10 minutes.
  6. After 10 minutes, add the green onions and noodles. Mix everything together and cook until the noodles are tender.
  7. Serve hot, and for an extra treat, pair it with chicken manchurian and hakka noodles for a full meal.
