Kashmiri Chhir Chot Recipe – Rice Pancakes

Ingredients
- 1 cup Rice flour
- Salt, to taste
- 1/2 teaspoon Ajwain (Carom seeds)
- Water, as needed
- Oil, for cooking

Instructions
- In a mixing bowl, sieve the rice flour to ensure it’s smooth. Add salt and ajwain seeds.
- Gradually add water, stirring continuously to form a smooth batter. It should have a consistency similar to dosa batter – neither too thick nor too runny.
- Heat a non-stick pan over medium-high heat. Once hot, reduce the flame to low.
- Ladle a portion of the batter onto the pan and spread it evenly in a round shape.
- Drizzle oil around the edges of the pancake and cover the pan with a lid. Allow the pancake to cook until the bottom turns light brown and small pores appear on the top.
- Apply a little oil to the top, then flip the pancake carefully. Cook the other side until golden brown.
- Serve the warm Chhir Chot with Tomato Garlic Chutney and Masala Chai for a perfect breakfast or tea-time snack.
