Italian Style Spinach Tomato Soup Recipe

Ingredients:
- 1 onion, finely chopped
- 2 carrots, sliced
- 2 cups spinach, boiled and chopped
- 3 tomatoes, pureed
- 5 garlic cloves, minced
- 4 cups vegetable stock
- 1/2 tablespoon red chili flakes
- 1/2 tablespoon paprika powder
- 1 tablespoon oregano
- 1 tablespoon black pepper powder
- Salt, to taste
- 1 tablespoon olive oil
- 1/2 cup pasta (penne), boiled
- 1/2 tablespoon white vinegar (optional)
Preparation Time: 15 minutes
Cooking Time: 30 minutes
Instructions:
- Heat olive oil in a large pan or pot. Add minced garlic and sautΓ© for 10 seconds.
- Add the chopped onion and cook until soft.
- Once the onions are soft, add paprika powder, black pepper powder, and oregano. Mix well.
- After 30 seconds, add spinach, tomato puree, carrots, and salt. Stir and cook for 1 minute.
- Add vegetable stock and vinegar (optional). Mix well and let it simmer for 15β20 minutes.
- Add the boiled pasta and red chili flakes. Stir and cook for another 10 minutes.
- Lastly, add the boiled spinach and cook for another 5 minutes.
- Serve hot with garlic bread for a delicious dinner or as a starter.
