Keerai Vadai Recipe

Ingredients:
- 1 cup chana dal (Bengal gram dal)
- 1 cup spinach, finely chopped
- 1 onion, finely chopped
- 2 green chillies, finely chopped
- 3 cloves garlic, finely chopped
- 1-inch piece of ginger, finely chopped
- 1 teaspoon cumin seeds
- Salt, to taste
- Olive oil, for deep frying
Preparation Time: 140 minutes

Instructions:
- Begin by soaking the chana dal in water for a few hours, as required. Set aside 1 tablespoon of chana dal for later use.
- Place the remaining chana dal in a blender along with green chillies, onion, cumin seeds, ginger, and salt. Blend everything into a smooth paste.
- Transfer the paste to a bowl, then add the finely chopped spinach and the reserved tablespoon of chana dal. Mix well until everything is evenly combined.
- Heat olive oil in a pan over medium heat. Take small portions of the keerai mixture and shape them into round vadai (fritters).
- Carefully drop the vadai into the hot oil and fry until they are golden brown and crispy on both sides. Drain excess oil by placing the vadai on a kitchen towel.
- Serve hot with coconut chutney and filter coffee for a delicious South Indian evening snack.
