Description: Keerai Vadai is a flavorful and crispy South Indian snack made from chana dal and fresh spinach. Popular as street food in Tamil Nadu, this easy-to-make dish is perfect for rainy days and pairs wonderfully with coconut chutney and filter coffee.

Ingredients:

  • 1 cup chana dal (Bengal gram dal)
  • 1 cup spinach, finely chopped
  • 1 onion, finely chopped
  • 2 green chillies, finely chopped
  • 3 cloves garlic, finely chopped
  • 1-inch piece of ginger, finely chopped
  • 1 teaspoon cumin seeds
  • Salt, to taste
  • Olive oil, for deep frying

Preparation Time: 140 minutes
Cooking Time: 30 minutes

Instructions:

  1. Begin by soaking the chana dal in water for a few hours, as required. Set aside 1 tablespoon of chana dal for later use.
  2. Place the remaining chana dal in a blender along with green chillies, onion, cumin seeds, ginger, and salt. Blend everything into a smooth paste.
  3. Transfer the paste to a bowl, then add the finely chopped spinach and the reserved tablespoon of chana dal. Mix well until everything is evenly combined.
  4. Heat olive oil in a pan over medium heat. Take small portions of the keerai mixture and shape them into round vadai (fritters).
  5. Carefully drop the vadai into the hot oil and fry until they are golden brown and crispy on both sides. Drain excess oil by placing the vadai on a kitchen towel.
  6. Serve hot with coconut chutney and filter coffee for a delicious South Indian evening snack.
