  • 1 cup Ragi Flour (Finger Millet/Nagli)
  • 1/4 cup Rice Flour
  • 1/4 teaspoon Salt (or to taste)

  • 1/2 teaspoon Cardamom Powder (Elaichi)
  • 1 tablespoon Cashew Nuts (roughly chopped)
  • 1 tablespoon Whole Almonds (Badam) (sliced)
  • 1 tablespoon Ghee

Instructions:

  1. Preparation: Begin by gathering and prepping all the ingredients.

  2. Roast the Flours: In a pan, place the rice flour and ragi flour over medium heat. Roast for about 1 minute until you begin to smell the roasted aroma. Remove from heat and transfer the mixture to a mixing bowl. Let it cool slightly, enough to handle it with your hands.

  3. Combine Ingredients: Stir in the salt, grated coconut, and cardamom powder into the flour mixture. Gradually sprinkle water over the mixture, adding a little at a time. Mix until the mixture holds together when squeezed but falls apart when loosened. Be cautious not to add too much water.

  4. Steam the Mixture: Steam the prepared flour mixture in a Kerala Puttu Steamer over high heat for about 10 minutes. After steaming, allow the ragi puttu to cool slightly and crumble it to achieve a coarse texture.

  5. Roast Nuts: In a separate pan, heat ghee over medium heat. Add the cashew nuts and almonds, roasting them until the cashews turn golden brown and crispy.

  6. Combine with Jaggery: Add the grated jaggery and roasted nuts to the cooled ragi puttu mixture. Mix well until everything is evenly combined.

  7. Serve: Serve your Ragi Arisi Vella Puttu as a healthy breakfast or an evening snack. It is also perfect for festive occasions like Navratri, providing a nutritious and delicious treat for the whole family.
