This Greek-style vegetable stew, known as Briami, features a medley of fresh vegetables simmered in a rich tomato sauce. It is seasoned with just a pinch of salt, which enhances the natural flavors of each vegetable. Ingredients

  • 1 Green zucchini, cut into wedges
  • 1 Brinjal (Baingan/Eggplant), cut into wedges
  • 2 Potatoes (Aloo), diced
  • 2 Carrots (Gajjar), diced
  • 2 Onions, sliced
  • 1 cup Cauliflower (gobi), cut into small florets
  • 1/2 cup White broad beans, soaked overnight
  • 5 Tomatoes, pureed
  • 4 cloves Garlic, chopped
  • 2 Stalks Celery, chopped
  • 2 sprigs Parsley leaves, finely chopped
  • Black pepper powder, to taste
  • Salt, to taste
  • 2 tablespoons Extra virgin olive oil, for cooking

Cook Time: 45 minutes

Instructions

  1. Prepare the Ingredients
    Begin by prepping all your ingredients, ensuring that everything is ready to go. In a pressure cooker, boil the tomatoes for 2 whistles, then puree them and set aside.

  2. Cook the Vegetables
    In a deep pan or kadai, heat the olive oil. Add the garlic and sliced onions, sautéing until the onions become soft and golden brown. Then, add the diced carrots and potatoes. Cook for 5-7 minutes, allowing them to soften.

  3. Pressure Cook the Beans
    In the meantime, pressure cook the soaked white broad beans for 4 whistles, then reduce the heat and simmer for an additional 15 minutes. Release the pressure naturally and set the beans aside.

  4. Combine Vegetables and Cook
    Add the eggplant, zucchini, and cauliflower to the pan with the potatoes and carrots. Continue to cook until the eggplants become soft.

  5. Add Tomato Puree and Beans
    Stir in the pureed tomatoes and cooked white beans. If needed, add water to adjust the consistency of the stew. Season with salt and black pepper to taste.

  6. Simmer the Stew
    Cover the pan with a lid and let the stew simmer for 20 minutes. This allows the vegetables to cook thoroughly and the flavors to meld together.

  7. Serve
    After 20 minutes, remove from heat. Your Greek Style Briami is ready to serve! This dish is perfect as a main course for parties or enjoyed as a comforting Sunday lunch.
