Ingredients:

  • 2 tablespoons Ragi Flour (Finger Millet/Nagli)
  • 1/2 cup Water
  • 2 cups Milk
  • 1 teaspoon Jaggery (or to taste)
  • 2 teaspoons Almond Meal (Badam Powder)
  • 1/2 teaspoon Cardamom Powder (Elaichi)
  • 1/2 teaspoon Dry Ginger Powder
  • A pinch of Saffron Strands (optional)
  • 1 teaspoon Ghee (or butter)

Prep Time: 5 minutes

Cook Time: 15 minutes

Instructions:

  1. Roast the Ragi Flour:
    Begin by melting the ghee in a saucepan. Add the ragi flour and roast it on medium flame, stirring continuously, until it changes color and releases a fragrant aroma. This will take a few minutes.

  2. Add Water:
    Lower the flame and gradually pour in the water, whisking constantly. The mixture will begin to thicken. Keep stirring to ensure it remains smooth.

  3. Add Milk and Sweeteners:
    Once the ragi flour is well incorporated, pour in the milk while stirring to avoid any lumps. Stir well and cook for a few minutes.

  4. Flavor the Malt:
    Add the jaggery, cardamom powder, dry ginger powder, saffron strands (if using), and almond meal. Continue to cook on medium flame until the mixture thickens to a porridge-like consistency.

  5. Serve:
    Turn off the heat and serve your Sweet Ragi Malt warm. Enjoy it as a wholesome, healthy breakfast or an energy-boosting snack.
