Burnt Garlic Chicken Fried Rice Recipe (Indo Chinese Fried Rice)

Ingredients:
- 200 grams Boneless chicken
- 12 cloves Garlic
- 2-1/2 cups Cooked rice
- Extra Virgin Olive Oil, as required
- 1/2 teaspoon Whole Black Peppercorns, crushed
- 3 Green Chillies, sliced
- 1-1/2 teaspoons Soy sauce
- 1/2 teaspoon Vinegar
For the Burnt Garlic:
- 9 cloves Garlic, sliced
- 1 teaspoon Extra Virgin Olive Oil
Preparation Time: 20 minutes
Cook Time: 20 minutes
Instructions:
- Heat oil in a wok or kadhai over medium heat. Add chopped garlic and sauté for about 1 minute, ensuring it doesn’t brown.
- Add onions and sauté until translucent, about 2 minutes.
- Add the chopped boneless chicken (preferably sliced thin) to the wok and sauté until the chicken is tender, being careful not to overcook it.
- Add salt, sliced green chillies, crushed black pepper, soy sauce, and vinegar to the chicken. Sauté for another 1 minute.
- Add cooked rice, mixing gently to avoid breaking the rice. Older rice works best for fried rice. Turn off the flame.
- In a separate small pan, heat olive oil and add the sliced garlic. Fry until the garlic turns a deep brown.
- Pour half of the burnt garlic into the rice and mix well. Taste the rice and adjust the seasoning as needed.
- Garnish with the remaining burnt garlic before serving.
