Healthy Tomato Carrot Onion Soup

Description:
This tomato soup is typically associated with health benefits. However, restaurant versions often include added butter and cream. Here, we offer a healthier alternative with no cream, combining the goodness of tomatoes with the added benefit of carrots. This recipe is light yet flavorful, perfect for a wholesome dinner.

Ingredients:

  • 1 tablespoon Oil
  • 7 Tomatoes, chopped
  • 1 Onion, chopped
  • 1 Carrot (Gajjar), thinly sliced
  • 7 cloves Garlic, chopped
  • Salt, to taste
  • 1 teaspoon Whole Black Peppercorns, crushed
  • 1/2 tablespoon Sugar (optional)

Preparation Time: 10 minutes
Cooking Time: 20 minutes

Instructions:

  1. Heat the oil in a heavy-bottomed pan over medium heat. Once the oil is hot, add the chopped garlic and sauté for about 20 seconds.

  2. Add the chopped onions and cook until they become soft and translucent.

  3. Stir in the thinly sliced carrots and salt. Mix well and cover the pan for about 3 minutes, allowing the carrots to cook halfway.

  4. Once the carrots are partially cooked, add the chopped tomatoes and season with crushed black pepper. Mix well and let it cook for another minute.

  5. Add water to the pan and cover with a lid. Allow it to cook until the tomatoes are fully cooked and mushy. Turn off the heat and let the mixture cool to room temperature.

  6. Once cooled, strain the mixture, reserving the water. Blend the mixture into a smooth puree.

  7. Add the reserved water to the puree and return it to the pan. Heat the soup for about a minute, adding more salt and a pinch of sugar if the tomato flavor is too sour. Cook for another 3–4 minutes.

  8. Once the soup has thickened to your desired consistency, turn off the heat.

  9. For a smoother texture, you can strain the soup again, discarding any remaining solids, and cook the strained soup for another minute.
