  • 1-1/2 cups Baby corn, sliced
  • 1 tablespoon Oil
  • 1 teaspoon Cumin seeds (Jeera)
  • 1 inch Ginger, finely chopped
  • 4 cloves Garlic, finely chopped
  • 1 Onion, finely chopped
  • 1 Tomato, finely chopped
  • 1 tablespoon Pav bhaji masala
  • 2 teaspoons Garam masala powder
  • 2 teaspoons Cumin powder (Jeera)
  • Salt, to taste
  • 1-1/2 cups Cooked rice, cooled completely
  • 1 tablespoon Lemon juice
  • 1/4 cup Coriander (Dhania) leaves, finely chopped

Instructions

  1. Cook the Baby Corn: Start by adding the sliced baby corn to a pressure cooker along with 2 tablespoons of water. Pressure cook for two whistles. Release the pressure immediately by running the cooker under cold water. This ensures the baby corn doesn’t get overcooked.

  2. Prepare the Masala Base: In a pan, heat oil over medium heat. Add cumin seeds (jeera), chopped ginger, and garlic. Sauté for a couple of minutes until fragrant. Add the onions and cook until they soften lightly. Stir in the chopped tomatoes and cook until they become soft and tender.

  3. Add Spices and Combine: Once the tomatoes have softened, add pav bhaji masala, garam masala powder, and cumin powder (jeera). Toss the mixture well to combine.

  4. Add Baby Corn and Rice: Turn the heat to high and add the cooked baby corn and rice. Stir-fry to ensure the rice is coated with the masala. Season with salt to taste.

  5. Simmer and Finish: Reduce the heat to low, cover the pan, and let it simmer for 3 to 4 minutes. Taste and adjust the salt and spices if needed.
