For the Kulfi Base:
- Milk: 3 liters (use 2% fat)
- Sugar: 1/2 cup
For the Thandai Masala Paste:
- Whole Almonds (Badam): 1/4 cup, blanched and peeled
- Cashew Nuts: 1/4 cup
- Pistachios: 1/4 cup
- Poppy Seeds: 2 tablespoons
- Cardamom Powder (Elaichi): 2 teaspoons
- Fennel Seeds (Saunf): 1 tablespoon
- Cinnamon Powder (Dalchini): 1/2 teaspoon
- Whole Black Peppercorns: 8

Prepare the Thandai Masala Paste
Blend the almonds, cashew nuts, pistachios, poppy seeds, cardamom powder, fennel seeds, cinnamon powder, and black peppercorns in a mixer grinder to form a smooth paste. Set the Thandai Masala Paste aside. -
Condense the Milk
- Heat the milk in a heavy-bottomed saucepan over medium heat and bring it to a boil.
- Once boiling, reduce the heat to low and let the milk simmer. Stir frequently to prevent sticking and burning.
- Continue simmering and stirring until the milk reduces to less than half its original quantity.

Sweeten and Add Flavor
- Once the milk has condensed, stir in the sugar and mix until fully dissolved.
- Add the prepared Thandai Masala Paste to the condensed milk. Use a hand blender to whisk the mixture for a smooth consistency.

Cool and Freeze
- Remove the pan from heat and allow the mixture to cool completely.
- Pour the cooled Thandai Kulfi mixture into kulfi molds, filling them 3/4 full. Seal the molds airtight.
- Place the molds in the freezer for at least 15 hours to ensure the kulfi sets completely.

Serve and Enjoy
- Once the kulfi is frozen, run the molds under water to loosen the kulfi.
- Gently remove the kulfi from the molds and serve as a festive dessert for Holi or any special occasion.
