Ingredients:
- 2 cups Idli Dosa Batter
- 1 Onion, finely chopped
- 1 Tomato, grated
- 4 tablespoons Idli Dosa Podi (Milagai Powder)
- 1 cup Potato Masala (see below for the ingredients)
Ingredients for Potato Masala:
- 2 Potatoes (Aloo), boiled and mashed
- 1 Onion, thinly sliced
- 1 inch Ginger, finely chopped
- 2 Green Chillies, slit
- 1/2 teaspoon Mustard seeds (Rai/ Kadugu)
- 1/2 teaspoon Cumin seeds (Jeera)
- 5 Curry leaves
- 1 tablespoon Oil
- Salt, as needed
- 1/4 teaspoon Turmeric powder (Haldi)

Prepare the Potato Masala:
- Heat 1 tablespoon oil in a small kadai (pan) over medium heat. Add mustard and cumin seeds, letting the mustard splatter.
- Add curry leaves, green chilies, and ginger, and sauté for about 30 seconds.
- Add the sliced onion and cook until it turns transparent.
- Add salt, turmeric powder, and the mashed potatoes. Stir everything together well.
- Sprinkle a little water and cook for 1 minute until all the ingredients are combined. Adjust the seasoning to taste. Turn off the heat and set the potato masala aside.

Make the Dosa:
- Heat a dosa skillet (tawa) over medium heat. Pour a ladleful of dosa batter onto the skillet, spreading it in a circular motion from the center to the outer edges, forming a thin crepe.
- Allow the dosa to cook for a minute. Sprinkle chopped onions, grated tomatoes, and a heaping teaspoon of Idli podi (Milagai Powder) on top.
- Drizzle some oil on the dosa and around its edges. Let it cook until the sides are golden brown.

Assemble the Dosa:
- Once the dosa is crispy and golden on the edges, place the required amount of potato masala on one side of the dosa. Fold it over to cover the filling.
