Karnataka Style Sorakkai Palya (Bottle Gourd Stir-Fry)

Karnataka Style Sorakkai Palya is a flavorful and simple side dish made with bottle gourd, cooked with aromatic spices and sambar powder in a pressure cooker. It’s a perfect dish for your everyday meal and pairs wonderfully with rice and sambar.

Ingredients:

  • 1 bottle gourd, peeled and chopped
  • 1 tomato, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 2 tablespoons sambar powder
  • 1 sprig curry leaves
  • Salt, to taste
  • Oil, as needed

Preparation Time: 10 minutes
Cooking Time: 30 minutes

Instructions:

  1. Heat oil in a pressure cooker.
  2. Add cumin seeds and curry leaves, and sauté for 10 seconds until fragrant.
  3. Add chopped tomatoes and salt, and cook until the tomatoes become soft and mushy.
  4. Once the tomatoes are soft, add turmeric powder, red chili powder, and sambar powder. Stir well.
  5. Add the chopped bottle gourd and mix everything thoroughly.
  6. After 2 minutes, add 1/2 cup of water. Close the pressure cooker and cook for 3 whistles.
  7. Let the pressure release naturally, then open the cooker.
  8. Serve your Karnataka Style Sorakkai Palya hot with rice and kirai sambar for a complete meal.
