Ingredients:

  • 1 cup Broccoli (approximately 10 florets)
  • A pinch of Salt
  • A pinch of Black Pepper Powder
  • 1/2 teaspoon Unsalted Butter
  • 3 Whole Almonds (Badam), soaked in hot water

Preparation Time: 15 minutes

Cooking Time: 10 minutes

Instructions:

  1. Begin by washing the broccoli florets thoroughly.
  2. Add the washed broccoli into a pressure cooker with 1/4 cup of water and a pinch of salt. Close the lid and cook for 1 whistle. Immediately release the pressure as broccoli cooks quickly and overcooking may deplete its nutrients.
  3. Soak the almonds in hot water for 15 minutes, then peel off their skins.
  4. Once the broccoli has cooled, transfer it along with the cooking water into a bowl. Add the soaked almonds and blend everything in a mixer until smooth.
  5. Heat a pan on low and add 1/2 teaspoon of unsalted butter. Let it melt, then add the blended broccoli mixture. Sprinkle a pinch of black pepper.
  6. Stir gently to combine, allowing the soup to simmer on low heat for 2-3 minutes.
  7. Turn off the heat. Serve the broccoli soup warm to babies or toddlers over 7 months for lunch or dinner. For children above 1 year, consider pairing the soup with a small piece of whole wheat bread toast for added texture.
