Aal Ke Kofte (Bottle Gourd Kofta Curry)

Ingredients:
For the Koftas:
- 250g Bottle Gourd (lauki), grated
- ½ cup Chickpea Flour (besan)
- 1 tsp Red Chili Powder
- 2 Green Chilies, finely chopped
- Salt, to taste
- Water, as needed
- Oil, for frying
For the Gravy:
- 1 tbsp Ginger-Garlic Paste
- ½ cup Yogurt
- 2 Onions, ground into a paste
- 2 Bay Leaves
- 2 Green Cardamom Pods
- ½ inch Cinnamon Stick
- 1 tsp Red Chili Powder
- ½ tsp Turmeric Powder
- 1 tsp Coriander Powder
- Salt, to taste
- Oil, as needed
- Water, as needed
- Fresh Coriander Leaves, chopped for garnish

Prepare the Koftas:
In a mixing bowl, combine all the ingredients for the koftas, including the grated bottle gourd, chickpea flour, red chili powder, chopped green chilies, salt, and a little water. Mix well to form a dough-like consistency.
Shape this mixture into small round balls (koftas) and set aside.
Heat oil in a deep pan and fry the koftas until golden brown. Remove them from the oil and drain on a kitchen towel to remove excess oil. Set aside. -
Make the Gravy:
In a separate pan, heat oil and add the bay leaves, cardamom pods, and cinnamon stick. Sauté for about 1 minute.
Add ginger-garlic paste and sauté for another 2 minutes.
Next, add the onion paste and cook for 5-6 minutes until the mixture turns golden brown.
Stir in the red chili powder, turmeric powder, coriander powder, and salt. Cook for another 5 minutes.
Reduce the heat, add the yogurt, and mix well. Add water as needed to adjust the gravy consistency. Let it simmer for 2-3 minutes. -
Combine Koftas with Gravy:
Gently add the fried koftas to the gravy and mix carefully. Let it simmer for a few more minutes to allow the koftas to absorb the flavors of the gravy.
Garnish with chopped fresh coriander leaves. -
Serve:
Serve Aal Ke Kofte hot with roti or rice, and pair it with a side of lauki raita for a wholesome meal.
