  • 1/2 tsp garam masala powder
  • Oil (as needed)
  • Water (as needed)
  • Salt (to taste)

Prep Time: 35 minutes

Cook Time: 30 minutes

Instructions:

  1. Prepare the base: Heat oil in a pan over medium heat. Add cumin seeds, mustard seeds, and a pinch of asafoetida. Let them splutter for a few seconds.

  2. Cook the onions: Add the finely chopped onions to the pan and cook until they become soft and golden brown.

  3. Add ginger garlic paste: Stir in the ginger garlic paste and sauté for about 2 minutes until fragrant.

  4. Tomatoes and puree: Add the chopped tomatoes and tomato puree. Cover the pan and cook for 3-4 minutes until the tomatoes soften and blend into the sauce.

  5. Spices: Add red chili powder, turmeric powder, coriander powder, garam masala powder, and salt. Mix well and cook the mixture for another 5 minutes.

  6. Add potatoes and paneer: Now add the boiled and mashed potatoes, shredded paneer, and 1/4 cup of water. Mix everything together and cook for 6-8 minutes to allow the flavors to combine.

  7. Add peas: Stir in the boiled and mashed green peas. Cover the pan and let it cook for another 3-5 minutes, allowing the peas to blend with the other ingredients.

  8. Garnish and serve: Garnish the dish with fresh coriander leaves for a burst of color and flavor. Serve hot with phulkas and palak raita for a complete meal.
