Bhutte Ka Kees (Sweet Corn Snack)

Bhutte Ka Kees is a popular street food from Indore, also frequently prepared in Rajasthani households. This easy and flavorful dish is perfect for an evening tea-time snack. Made with a coarse paste of sweet corn, ginger, green chilies, and a blend of spices, it’s a quick and delicious treat that can be ready in under 30 minutes. Ideal for rainy days, this warm snack pairs wonderfully with Masala Chai.

Ingredients:

  • 1-1/2 cups Sweet Corn, steamed and ground into a paste
  • 1 teaspoon Ghee
  • 1/2 cup Milk
  • 1/2 teaspoon Cumin Seeds (Jeera)
  • 1/2 teaspoon Mustard Seeds (Rai/Kadugu)
  • 1 Green Chilli, finely chopped
  • 1 teaspoon Ginger, grated
  • 1/2 teaspoon Turmeric Powder (Haldi)
  • 1/4 teaspoon Red Chilli Powder
  • 1/4 teaspoon Asafoetida (Hing)
  • 1/2 teaspoon Sugar
  • 1 teaspoon Lemon Juice
  • Coriander (Dhania) Leaves, for garnish
  • Salt, to taste

Preparation:

  1. Steam the Corn: In a pressure cooker, add the sweet corn with enough water. Cook for 2 whistles and allow it to cool slightly.
  2. Make the Paste: Once cooled, blend the steamed corn with a little milk to create a coarse paste. Set aside.
  3. Heat Ghee: In a wok or heavy-bottomed pan, heat ghee and add asafoetida, cumin seeds, and mustard seeds. Let them cook for about 15 seconds until aromatic.
  4. Add Spices: Add the grated ginger, chopped green chilies, turmeric powder, and salt. Sauté for 30 seconds.
  5. Combine Corn Paste: Add the prepared corn paste to the pan and cook for about 2 minutes, stirring well.
  6. Add Red Chilli Powder: Stir in red chili powder and cook for another 10 seconds.
  7. Add Milk & Sugar: Pour in milk and add sugar. Stir frequently and let it cook for 3-5 minutes, allowing the flavors to blend.
  8. Finish with Lemon & Coriander: Once cooked, add lemon juice and garnish with coriander leaves.

Serving Suggestions:

Serve Bhutte Ka Kees hot, accompanied by Masala Chai for a perfect snack break.
