Ingredients:

  • 2-1/2 cups Whole Wheat Flour
  • 1 cup Caster Sugar
  • 2 teaspoons Baking Powder
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Orange Zest (Rind)
  • 1/4 cup Fresh Orange Juice
  • 1 teaspoon Lemon Juice
  • 1/4 cup Milk
  • 1/2 cup Extra Virgin Olive Oil
  • 4 Whole Eggs

Preparation Time: 10 minutes
Cook Time: 35 minutes

Instructions:

  1. Preheat the oven to 180ยฐC (350ยฐF) and allow it to heat for 10 minutes.
  2. In a mixing bowl, combine the dry ingredients: whole wheat flour, caster sugar, baking powder, and salt.
  3. Add the wet ingredients: milk, extra virgin olive oil, and eggs, and mix well until the batter is light and fluffy.
  4. Stir in the freshly squeezed orange juice, lemon juice, and orange zest, and mix until fully incorporated.
  5. Grease a springform cake pan with butter, dust with flour, and pour the batter into the prepared pan.
  6. Bake in the preheated oven for 30 minutes. To test for doneness, insert a knife into the center of the cake; if it comes out clean, the cake is done. If not, bake for an additional 10 minutes.
