  • Water (for kneading)

  • 1 cup Sweet Corn
  • 4 Potatoes (Aloo), boiled
  • 1 Green Chilli
  • A handful of Coriander (Dhania) Leaves, chopped
  • 1 Onion, chopped
  • 2 teaspoons Mango Pickle (or any pickle of your choice)
  • 3 tablespoons Oil (for rolling and frying)

Instructions:

  1. Prepare the Stuffing:

    • Wash the sweet corn and set aside. Boil the potatoes by either pressure cooking them for 2 whistles or boiling them in a saucepan with water for about 15 minutes until tender.
    • Once the potatoes are cooked, peel and mash them in a bowl.
    • Add the chopped coriander leaves, sweet corn, and mango pickle (or your preferred pickle) to the mashed potatoes.
    • Season with salt and mix the stuffing well. Set aside.
  2. Prepare the Dough:

    • In a large bowl, combine the whole wheat flour and salt.
    • Gradually add water and knead into a smooth, homogenous dough.
    • Coat the dough ball with a little oil and let it rest for 10 minutes.
  3. Assemble the Parathas:

    • Divide the dough into medium-sized balls.
    • Roll out each ball into a 4-5 inch diameter disc.
    • Place about 1 tablespoon of the prepared corn stuffing in the center of each disc.
    • Gently fold the edges of the dough around the stuffing, sealing the filling inside.
    • Roll out the stuffed dough ball carefully into a paratha.
  4. Cook the Parathas:

    • Heat a tawa (griddle) on medium flame and add a little oil.
    • Place the stuffed paratha on the tawa and cook on both sides, applying oil as needed, until golden brown and crisp.
    • Once cooked, remove from the tawa and set aside. Repeat the process for the remaining dough balls and stuffing.
  5. Serve:

    • Serve your Corn Stuffed Paratha hot, paired with Pisarna Manga (or any favorite side dish) and homemade curd for a complete meal.
