Capsicum Masala Poriyal Recipe

Ingredients:
- 1 teaspoon oil
- 1 teaspoon mustard seeds
- 1 yellow capsicum, chopped
- 1 red capsicum, chopped
- 1 green capsicum, chopped
- 1 onion, chopped
- A few curry leaves
- Salt to taste
For the Masala Powder:
- 1/2 cup roasted peanuts
- 1 tablespoon grated coconut
- 4 dried red chillies
- 3 cloves garlic (unpeeled)
- 1 teaspoon cumin seeds
For Garnish:
- 4 sprigs coriander leaves, chopped
Preparation Time: 38 minutes
Cooking Time: 25 minutes
Instructions:
- Heat oil in a wok and add mustard seeds. Let them splutter for about 15 seconds.
- Add chopped onions and sauté until they soften.
- Once the onions are soft, add the chopped capsicums (yellow, red, and green), curry leaves, and salt. Stir and let it cook for about 5 minutes.
- Meanwhile, prepare the masala powder by grinding all the ingredients (peanuts, coconut, dried red chillies, garlic, and cumin seeds) in a blender.
- Add the freshly ground masala powder to the capsicum mixture. Stir well and cook for another 5 minutes, allowing the flavors to blend.
- Garnish with chopped coriander leaves.
