Papitha Nu Shaak (Raw Green Papaya Sabzi)

Papitha Nu Shaak is a delightful Gujarati dish typically served alongside Fafda (a crispy gram flour snack) and Jalebi (sweet, fried dessert). Ingredients:
- 500g Raw papaya, peeled and sliced
- 2 tablespoons Gram flour (besan)
- 1 teaspoon Mustard seeds (Rai/Kadugu)
- 1 teaspoon Cumin seeds (Jeera)
- 1/4 teaspoon Asafoetida (hing)
- 1 teaspoon Turmeric powder (Haldi)
- 2 Green Chillies, slit
- 1 tablespoon Oil
- Salt, to taste

Instructions:
- Start by peeling the raw papaya and cutting it into thin slices.
- In a mixing bowl, combine the sliced papaya with gram flour, turmeric powder, asafoetida, and salt. Mix well to coat the papaya evenly with the spices.
- Heat oil in a pan over medium heat. Once the oil is hot, add mustard seeds and cumin seeds. Allow them to crackle.
- Add the slit green chillies to the pan and fry for a few seconds.
- Add the gram flour-coated papaya slices to the pan and stir gently to combine the ingredients.
- Reduce the heat to low and cook the papaya for a few minutes, until it becomes tender.
- Turn off the heat and transfer the cooked Papitha Nu Shaak to a serving bowl.
- Serve the dish as a side with the main course or enjoy it with tawa paratha for a satisfying lunch.
