Vegetable Uttapam
Description:
Vegetable Uttapam is a delightful South Indian breakfast dish, similar to dosa but slightly thicker. It’s a great way to use up leftover idli dosa batter and can be enjoyed as a wholesome breakfast or snack. Topped with a variety of fresh vegetables, such as carrots, capsicum, onions, and tomatoes, Vegetable Uttapam is not only nutritious but also delicious. Serve it with coconut chutney and sambar for a complete meal.

Ingredients:
- 1 cup Idli Dosa Batter
- 1/4 cup Onion, finely chopped
- 1/4 cup Green Bell Pepper (Capsicum), finely chopped
- 1/4 cup Carrot (Gajjar), finely chopped
- 1 Tomato, finely chopped and deseeded
- 2 Green Chillies, finely chopped
- 2 tablespoons Coriander (Dhania) Leaves, finely chopped
- Oil, for greasing

Instructions:
- Begin by placing the dosa batter in a bowl. If necessary, add water to adjust the consistency.
- Finely chop all the vegetables and set them aside.
- Heat a non-stick tawa or griddle and grease it with oil.
- Once the tawa is hot, pour a ladleful of the dosa batter onto it and spread it in a circular motion, ensuring itβs not too thin.
- As the batter starts to cook, small holes will form on the surface. At this point, sprinkle the chopped vegetables evenly over the batter.
- Drizzle a little oil around the edges and in the center of the uttapam.
- Reduce the flame to medium, cover, and cook for a few seconds until the vegetables are slightly cooked.
- Press the uttapam gently with the back of a spatula and flip it to cook the other side for 2-3 minutes until golden brown.
- Remove from the tawa and transfer to a serving plate.
- Serve hot with coconut chutney and sambar.
