Ingredients
- 1 cup Rajma (Large Kidney Beans), washed and soaked overnight (6-8 hrs.)
- 2 Potatoes (Aloo), boiled and peeled
- 2 Green Chillies, finely chopped
- 1/4 cup Coriander (Dhania) Leaves, finely chopped
- 1/2 tbsp Red Chilli Powder
- 1/2 tbsp Coriander Powder (Dhania)
- 1/4 tbsp Cumin Powder (Jeera)
- 1/2 tbsp Garam Masala Powder
- 1/2 tbsp Amchur (Dry Mango Powder)
- 1 tbsp Gram Flour (Besan), roasted
- Salt, to taste
- Oil, for cooking

Cook the Rajma: In a pressure cooker, cook the soaked rajma with enough water until they are very soft. Once cooked, allow them to cool completely and drain any excess water. You can save the water for soups or cooking rice.

Prepare the Mixture: In a large bowl, mash the cooked rajma along with the boiled and mashed potatoes. Add the red chili powder, coriander powder, cumin powder, garam masala, chopped green chilies, amchur powder, chopped coriander leaves, besan, and salt. Use a food processor to blend all the ingredients smoothly for an even consistency. Taste the mixture and adjust salt and spices as needed.

Shape the Cutlets: Grease your palms with a little oil and divide the mixture into small portions. Shape each portion into a circular disc or patty.
