Bhindi Masala Curry Recipe

Ingredients:

  • 250 grams ladyfinger (okra)
  • 4 tbsp sambar powder
  • 1 tsp turmeric powder
  • 2 tsp Kashmiri red chili powder
  • 1 tsp red chili powder
  • Salt, to taste
  • 1/2 tsp mustard seeds
  • 1/4 tsp cumin seeds
  • 1 tsp garlic, chopped
  • 1 onion, thinly sliced
  • 1 tomato, chopped into large pieces
  • 1 tsp sugar
  • Oil, as needed
  • Sesame seeds (white), for garnish

Preparation Time: 15 minutes
Cook Time: 40 minutes

Instructions:

  1. Wash the ladyfinger (okra) thoroughly and dry it well. Cut off the corners and make a slit down the middle of each piece.
  2. In a bowl, mix sambar powder, red chili powder, Kashmiri red chili powder, turmeric powder, and oil to form a paste. Stuff the prepared ladyfingers with this spice mixture.
  3. Place the stuffed ladyfingers in a steamer and steam them until they become soft (about 10-12 minutes).
  4. Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Once they splutter, add the chopped garlic and sauté for 20 seconds.
  5. Add the thinly sliced onion, sugar, and salt. Cook until the onion softens.
  6. Add the steamed ladyfingers and cook on medium flame for about 5 minutes, allowing the flavors to blend.
  7. Add the chopped tomato and cook until the tomatoes soften, stirring occasionally.
  8. Adjust salt to taste, mix well, and garnish with sesame seeds.
  9. Serve Bhindi Masala Curry hot, paired with Dal Tadka, Palak Raita, and Phulkas for a complete and satisfying lunch.
