Bhindi Masala Curry Recipe

Ingredients:
- 250 grams ladyfinger (okra)
- 4 tbsp sambar powder
- 1 tsp turmeric powder
- 2 tsp Kashmiri red chili powder
- 1 tsp red chili powder
- Salt, to taste
- 1/2 tsp mustard seeds
- 1/4 tsp cumin seeds
- 1 tsp garlic, chopped
- 1 onion, thinly sliced
- 1 tomato, chopped into large pieces
- 1 tsp sugar
- Oil, as needed
- Sesame seeds (white), for garnish

Instructions:
- Wash the ladyfinger (okra) thoroughly and dry it well. Cut off the corners and make a slit down the middle of each piece.
- In a bowl, mix sambar powder, red chili powder, Kashmiri red chili powder, turmeric powder, and oil to form a paste. Stuff the prepared ladyfingers with this spice mixture.
- Place the stuffed ladyfingers in a steamer and steam them until they become soft (about 10-12 minutes).
- Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Once they splutter, add the chopped garlic and sauté for 20 seconds.
- Add the thinly sliced onion, sugar, and salt. Cook until the onion softens.
- Add the steamed ladyfingers and cook on medium flame for about 5 minutes, allowing the flavors to blend.
- Add the chopped tomato and cook until the tomatoes soften, stirring occasionally.
- Adjust salt to taste, mix well, and garnish with sesame seeds.
- Serve Bhindi Masala Curry hot, paired with Dal Tadka, Palak Raita, and Phulkas for a complete and satisfying lunch.
