Kerala Kadala Curry

Ingredients:
For the curry:
- 1 cup black gram (soaked overnight and cooked)
- 2 onions, finely chopped
- 1 tomato, finely chopped
- 5 cloves garlic (paste)
- 1-inch ginger (paste)
- 1/4 tsp turmeric powder
- 2 cups water
- Oil or coconut oil
- Salt, to taste
For the paste:
- 1 cup coconut
- 2 green chillies
- 3 tbsp coriander seeds
- 1/2 tsp fennel seeds
- 1/2 tsp red chilli powder
For tempering:
- 1/2 tsp mustard seeds
- 2 sprigs curry leaves

Prepare the Black Gram: Soak the black gram overnight in water. The next day, cook it until tender.

Make the Paste: In a blender, combine coconut, green chillies, coriander seeds, fennel seeds, and red chilli powder. Grind it into a smooth paste and set aside.

Cook the Gravy: Heat oil (or coconut oil) in a pan. Add the chopped onions and sauté until soft and golden. Add the ginger and garlic paste, cooking for another 2 minutes.

Add the turmeric powder and chopped tomatoes. Cook until the tomatoes soften and release their juices.

Add the ground coconut paste to the pan and cook for 3-4 minutes, allowing the flavors to blend.

Combine with Black Gram: Add the cooked black gram and water to the pan. Stir well, cover, and let it simmer for 30 minutes to allow the flavors to meld.

Prepare the Tadka (Tempering): In a small pan, heat oil and add mustard seeds. Once they begin to splutter, add curry leaves and cook for 10 seconds.

Final Touch: Pour the tempering over the curry and mix gently. Let it cook for another 3 minutes.
