Ingredients:

For the Koftas:

  • 1 Banana flower (Vazhaipoo), cleaned and florets separated
  • 2 tablespoons Buttermilk
  • 250 grams Shrimps, cleaned and deveined
  • 1 ½ teaspoons Ginger Garlic Paste
  • 1 teaspoon Coriander Powder (Dhania)
  • 1 teaspoon Red Chilli Powder
  • 1 teaspoon Turmeric Powder (Haldi)
  • 4 tablespoons Gram Flour (Besan)
  • 1 teaspoon Garam Masala Powder
  • 2 tablespoons Corn Flour
  • ½ teaspoon Sugar
  • Salt, to taste
  • Oil, for shallow frying

For the Gravy:

  • 1-inch Cinnamon Stick (Dalchini)
  • 3 Cardamom Pods (Elaichi)
  • 1 Onion, churned to paste
  • ⅓ cup Homemade Tomato Puree
  • 2 tablespoons Curd (Dahi/Yogurt), beaten
  • 1 ½ teaspoons Poppy Seeds
  • 8 Cashew Nuts
  • 2 Green Chillies, chopped
  • ½ teaspoon Red Chilli Powder
  • 1 ½ teaspoons Garam Masala Powder
  • 1 teaspoon Sugar
  • Salt, to taste
  • 1 teaspoon Ghee (or Butter)
  • 2 teaspoons Oil

Instructions:

  1. Prepare the Banana Blossom:
    Clean the banana flower by peeling off the outer petals and removing the white florets. Soak them in 2 tablespoons of buttermilk while you clean the rest of the flower.

  2. Pressure Cook the Banana Blossom:
    In a pressure cooker, add the banana florets along with a teaspoon of oil and a pinch of turmeric powder. Pressure cook for one whistle, then release the pressure immediately. Set aside.

  3. Prepare the Shrimp Mixture:
    In a shallow frying pan, heat a teaspoon of oil. Add the shrimps and sauté with a pinch of salt until cooked. Set aside. In the same pan, add 2 tablespoons of oil and sauté the ginger garlic paste until the raw smell disappears. Add coriander powder, red chilli powder, turmeric powder, and garam masala powder, and sauté for another 5–8 minutes, until fragrant.

  4. Combine Ingredients:
    Add the cooked banana blossom to the pan, along with sugar and salt to taste. Sauté everything together until well combined, then switch off the heat. Add the gram flour and mix thoroughly.

  5. Prepare the Kofta Batter:
    In a bowl, mix the corn flour with ½ cup of water to form a smooth batter. Set it aside.

  6. Form the Koftas:
    Shape the banana blossom and shrimp mixture into small balls, placing a shrimp inside each ball. Dip each ball in the corn flour batter.

  7. Shallow Fry the Koftas:
    Heat a kuzhi paniyaram pan and lightly grease the wells with oil. Place the kofta balls in the pan, cooking them with a few drops of oil until golden brown and crispy on all sides.

  8. Prepare the Gravy:
    In a separate pan, heat a teaspoon of oil and add the cinnamon stick and cardamom pods. Once aromatic, add the churned onion paste and sauté until it turns golden. Add the tomato puree and cook until the oil begins to separate from the mixture.

    Carefully add the shallow-fried koftas to the gravy and simmer for a few minutes to allow the flavors to meld. Serve hot with Jeera rice or Kesar Pulao.
