Ingredients:
- 1 yellow cucumber (peeled and finely chopped)
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp moong dal (yellow lentils)
- 1 tsp fenugreek seeds
- 5 dry red chilies
- Salt to taste
- 1/4 tsp turmeric powder
- 2 small tamarind pieces
- 1/4 tsp asafoetida (hing)

Cook Time: 5 minutes
Instructions:
- Wash and peel the yellow cucumber, then finely chop it.
- Heat oil in a pan, add mustard seeds, fenugreek seeds, and moong dal. Cook for 1 minute.
- Add dry red chilies and asafoetida, cook for another 30 seconds, and then turn off the heat. Let the mixture cool.
- In a blender, combine half of the cooled tempering mixture, salt, turmeric powder, and tamarind. Blend into a smooth paste.
- Mix the prepared paste with the remaining tempering and combine thoroughly with the chopped cucumber.
- Serve the Yellow Cucumber Pachadi with Mixed Vegetable Sambar and phulkas for a complete meal.
