Recipe Name: Palak Khichdi with Brown Rice and Toasted Peanuts

Ingredients:
- 1 cup brown rice (soaked for 30 minutes)
- 1 cup yellow moong dal (soaked for 30 minutes)
- 1 cup small onions (chopped)
- 1 tsp fennel seeds
- 1/4 cup coconut milk
- Salt to taste
- 1 cup spinach
- 1 green chili
- 1-inch piece ginger
- 2 garlic cloves
- 1 tsp cumin seeds
- 1 sprig curry leaves
- 1-inch cinnamon stick
- 3 tbsp peanuts
- 2 dried red chilies
- A pinch of asafoetida (hing)

Cooking Time: 15 minutes
Instructions:
- Begin by making spinach puree. Place spinach in 1/2 cup water and blend it into a smooth puree.
- Heat oil in a pressure cooker, and add chopped onions and fennel seeds. Sauté until the onions turn soft.
- Add the spinach puree and cook for 5-6 minutes.
- Add soaked brown rice and moong dal to the cooker, along with 2 cups of water. Stir well.
- After a minute, pour in the coconut milk and season with salt. Close the lid of the pressure cooker and cook for 3 whistles. Let the pressure release naturally.
- For the tempering, heat oil in a separate pan. Add cumin seeds, curry leaves, asafoetida, and cinnamon stick. Once they sizzle, add the dried red chilies and peanuts. Fry the peanuts until golden brown.
- Pour the tempering over the cooked khichdi and mix well.
- Serve the Palak Khichdi hot, accompanied by boondi raita and papad for a complete dinner.
