Kovakka Thoran is a simple and delicious South Indian dish made by cooking tindora (ivy gourd) with coconut and an aromatic blend of spices. This dish is a staple in Kerala households and is often paired with sambar and rice or roti. It’s not only flavorful but also easy to prepare and perfect for packing in lunchboxes.

Ingredients:

  • 500 gms tindora, chopped
  • 1/2 cup grated coconut
  • 2 green chillies
  • 2 sprigs curry leaves
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • Salt, to taste

Preparation Time: 10 mins

Cooking Time: 15 mins

Total Time: 25 mins

Instructions:

  1. Cook Tindora: In a pressure cooker, add the chopped tindora and 2 tbsp of water. Pressure cook for a few minutes until the tindora is tender but not mushy. Set it aside.

  2. Grind the Coconut Mixture: In a mixer grinder, add the grated coconut, green chillies, curry leaves, and cumin seeds. Grind them into a coarse paste.

  3. Combine the Mixture: Pour the coconut paste into the cooked tindora and mix well. Keep this mixture aside.

  4. Prepare the Tempering: Heat oil in a pan and add mustard seeds. Let them splutter for about 10 seconds. Then add curry leaves and turmeric powder. Fry for a few seconds until fragrant.

  5. Final Mixing: Pour the tempering over the tindora mixture, add salt, and mix thoroughly.

  6. Serve: Serve your flavorful Kovakka Thoran with a side of Tomato Onion Sambar and rice or roti for a satisfying lunch.
