- 3 eggs
- 1 cup broccoli, chopped
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 6 cloves garlic, finely chopped
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder
- 2 tablespoons coriander leaves, finely chopped
- Salt, to taste
- 2 tablespoons oil

Instructions:
- Heat the oil in a pan over medium heat. Add the finely chopped onions and sauté until they turn soft and golden.
- Add the chopped garlic and cook for another minute until fragrant.
- Add the chopped tomatoes and cook until they soften and break down into a mushy consistency.
- Stir in the chopped broccoli and cook for 10 minutes, allowing the broccoli to soften and blend with the other ingredients.
- Season with turmeric powder, red chili powder, and salt. Stir well to coat the vegetables evenly with the spices.
- Crack the eggs one by one into the pan, mixing them gently into the cooked vegetables. Stir continuously to ensure the eggs cook evenly and break apart into a scrambled texture (bhurji).
- Once the eggs are cooked through and well mixed with the vegetables, remove from heat.
- Garnish with freshly chopped coriander leaves and give it a final mix.
