Basbousa Recipe With Egg is a delightful Middle Eastern cake made with semolina, desiccated coconut, and flour. This variation of the classic Basbousa adds eggs for a lighter, fluffier texture. Ingredients:

  • 1 cup Sooji (Semolina/Rava)
  • 1 cup Desiccated Coconut
  • 3/4 cup Vivatta Maida (All-purpose Flour)
  • 1/2 cup Sugar
  • 2 Whole Eggs
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Curd (Dahi / Yogurt), or Milk
  • 1/2 cup Butter (Salted), melted

For the Sugar Syrup:

  • 1 cup Sugar
  • 1 cup Water
  • 1 teaspoon Lemon juice
  • 1 teaspoon Rose water

Preparation Time: 15 minutes
Cooking Time: 75 minutes

Instructions:

  1. Preheat the oven to 200°C and grease a square baking tray with butter.
  2. In a mixing bowl, combine semolina, desiccated coconut, and flour.
  3. Add the wet ingredients: eggs, melted butter, curd (or milk), and vanilla extract. Mix well and set the mixture aside to rest for 15 minutes.
  4. After the resting time, transfer the mixture into the prepared baking tray and spread it evenly.
  5. Bake the mixture at 180°C for about 40 minutes or until the top turns golden brown.
  6. Meanwhile, prepare the sugar syrup. In a saucepan, combine sugar, water, lemon juice, and rose water. Bring the mixture to a boil and then simmer for an additional 5 minutes to reach a one-string consistency. Remove from heat and set aside.
  7. Once the cake is baked, remove it from the oven. Run a knife along the edges and cut it into your desired shapes. Pour the prepared sugar syrup evenly over the cake.
  8. Return the cake to the oven and bake for an additional 15 minutes to allow the syrup to soak in.
  9. Remove from the oven and let it cool for 20 minutes. Serve warm, or chill for later.
  10. Garnish with extra desiccated coconut powder before serving. Enjoy your Basbousa as a party dessert, paired with a refreshing Fizzy Pomegranate & Mint Mocktail!
