Cuisine: Middle Eastern
Course: Dinner
Diet: Vegetarian

Ingredients:

  • 300 grams Beetroot, peeled and roughly grated
  • 1 1/2 cups Kabuli Chana (White Chickpeas), boiled
  • 1/4 cup Whole Wheat Bread crumbs
  • 1 teaspoon Ginger, grated
  • 1 teaspoon Paprika powder
  • 1 teaspoon Extra Virgin Olive Oil (for the mixture)
  • 2 tablespoons Parsley leaves, chopped
  • 1/2 teaspoon Cumin powder (Jeera)
  • 3 tablespoons Sesame seeds (Til seeds)
  • Salt, to taste
  • Extra Virgin Olive Oil, for frying
  • 4 Whole Wheat Pita Bread, toasted

Preparation Time: 10 minutes

Cook Time: 30 minutes

Servings: 4

Instructions:

  1. Prepare the Beetroot Mixture:
In a blender, combine the grated beetroot, boiled chickpeas, grated ginger, paprika powder, chopped parsley, cumin powder, sesame seeds, salt, and 1 teaspoon of olive oil. Blend until the mixture is smooth and well-combined.

  2. Shape the Falafel:
Add the whole wheat bread crumbs to the beetroot mixture and mix well. Let it sit for about 10 minutes to allow the flavors to meld. Then, shape the mixture into medium-sized balls and slightly flatten them.

  3. Fry the Falafel:
Heat some extra virgin olive oil in a cast-iron skillet over medium heat. Once the oil is hot, add 2-3 falafel balls at a time. Cook the falafel until they are golden brown on all sides. Remove them from the skillet and place them on a paper towel to absorb excess oil. Repeat with the remaining falafel balls.

  4. Prepare the Pita Bread:
Toast the whole wheat pita bread until warm and slightly crispy. If desired, you can cut the pita into smaller wedges for easy serving.

  5. Serve:
Serve the crispy Beetroot Falafel with the warm pita bread. For an extra touch, drizzle some tahini sauce on top and pair it with a refreshing Charred Corn and Radish Salad on the side.

Enjoy this healthy and flavorful Middle Eastern dish that’s perfect for a satisfying dinner!
