Ingredients

  • 1 ripe Avocado
  • 1 Carrot (Gajjar), grated
  • Sooji (Semolina/ Rava), or breadcrumbs for dusting
  • 1 tablespoon Rice flour (if required)
  • 1 Onion, finely chopped
  • 3 tablespoons Coriander (Dhania) Leaves, chopped
  • 2 Green Chillies, chopped
  • 1 teaspoon Ginger, grated
  • 1 teaspoon Garlic, grated
  • 1 teaspoon Tamarind Water, or lime juice
  • 2 tablespoons Oil, for shallow frying

Spices:

  • 2 teaspoons Garam masala powder
  • 1 teaspoon Coriander Powder (Dhania)
  • 1/2 teaspoon Cumin powder (Jeera)
  • 1 teaspoon Red Chilli powder
  • 1/2 teaspoon Black pepper powder
  • 1/2 teaspoon Turmeric powder (Haldi)
  • Salt, to taste

Preparation Time: 10 minutes

Cooking Time: 8 minutes

Instructions

  1. Start by peeling and mashing the avocado with a fork in a bowl.
  2. In a skillet, heat 1 teaspoon of oil and fry the grated carrots over medium-high heat for about a minute. Remove from heat and set aside.
  3. In a separate bowl, combine the cooked carrot, chopped onions, grated ginger and garlic, green chilies, and coriander leaves.
  4. Add all the spices, salt, tamarind water (or lime juice), and mix well.
  5. If the mixture is too wet to form koftas, add 1 tablespoon of rice flour and stir to absorb the moisture.
  6. Shape the mixture into oval-shaped koftas, slightly larger than a ping pong ball, and place them on a plate.
  7. Coat each kofta by rolling it in semolina or breadcrumbs.
  8. Heat some oil in a skillet and place the prepared koftas, leaving space between each. Fry on medium heat for about 5 minutes on one side, then turn them over and fry until browned and crispy.
  9. Once crispy, remove the koftas from the skillet and serve hot.

Serving Suggestion: Enjoy your Pan Fried Avocado Koftas with Dhaniya Pudina Chutney and a cup of Masala Chai for a perfect evening snack!
