Ingredients:

  • 2 cups cluster beans (Gawar), cleaned and chopped
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 3 cloves garlic, ground
  • 1/2 teaspoon ginger, grated
  • 2 teaspoons coriander powder
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 1/2 teaspoons red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon asafoetida
  • Salt, to taste
  • Coriander leaves, chopped, as needed

Preparation Time: 10 minutes
Cooking Time: 20 minutes

Instructions:

  1. Heat oil in a pressure cooker. Add mustard seeds, and after about 10 seconds, add cumin seeds.
  2. Once the cumin seeds splutter, add asafoetida, turmeric powder, garlic, and chopped onion. Cook for a few seconds until the onions soften.
  3. Stir in ginger, red chili powder, and coriander powder, mixing well. Cook for an additional 15 seconds.
  4. Add chopped tomatoes and cluster beans (Gawar) to the pot and stir to combine.
  5. Add salt and 1/4 cup water, then close the lid. Cook until one whistle is released, then reduce the heat and let it simmer for another 5 minutes.
  6. Garnish with fresh coriander leaves.
  7. Serve Gawar ki Sabzi with garlic daal and phulkas for a complete lunch.
