Ingredients:
- 4 cups Chicken stock
- 1 cup Boneless chicken, boiled and cut into pieces
- 1 tablespoon Ginger, minced
- 1 1/2 tablespoons Soy sauce
- 1/2 cup Carrots (Gajjar), finely chopped
- 1/2 cup Cabbage (Patta Gobi/ Muttaikose), finely sliced
- 2 tablespoons Sweet corn
- 4 Button mushrooms, sliced
- 1/2 cup Spring onions (Bulb & Greens), sliced
- Salt, to taste
- 1 cup Udon noodles, boiled
- 2 Whole eggs

In a large pot, combine the chicken stock, minced ginger, and soy sauce. Bring it to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and let it simmer for 3–4 minutes to allow the flavors to meld together. -
Add Vegetables:
Stir in the finely chopped carrots and let the soup simmer for a few more minutes. Then, add the boiled chicken pieces, cabbage, mushrooms, sweet corn, and spring onion. Allow everything to simmer together for an additional 5 minutes. Adjust salt to taste. -
Cook the Noodles:
While the soup is simmering, cook the udon noodles in a separate pot. Drain and set them aside. -
Assemble the Soup:
In a serving bowl, place the cooked udon noodles at the bottom. Pour the hot soup over the noodles and garnish with remaining spring onions. -
