Carrot and Beans Poriyal (South Indian Style)
Carrot and Beans Poriyal is a flavorful South Indian dish made with a mix of tender carrots and fresh green beans, cooked in a medley of traditional South Indian spices. The dish is seasoned with mustard seeds, urad dal, curry leaves, and a pinch of asafoetida, giving it a distinct aroma and taste. Instructions:
- 
Prepare the Vegetables: Related Articles- Start by chopping the green beans and carrots into small, bite-sized pieces.
- Steam the chopped vegetables for about 10 minutes, or until they are tender. Once done, set them aside.
 
- 
Temper the Spices: - In a large pan or kadhai, heat 1 tablespoon of oil over medium heat.
- Add the mustard seeds. Let them splutter for about 15 seconds.
- Next, add the urad dal and sauté until the dal turns golden brown.
- Add the curry leaves and asafoetida, and cook for an additional 15 seconds until fragrant.
 
- 
Combine and Cook: - Add the steamed carrots and beans into the pan. Stir well to combine with the tempered spices.
- Sprinkle in the turmeric powder and salt. Mix everything together thoroughly.
- Let the mixture cook on high heat for 30-40 seconds, allowing the flavors to meld together.

Garnish and Serve: - Remove the pan from the heat and garnish with freshly grated coconut and chopped cilantro for a fresh burst of flavor.
- Serve the Carrot and Beans Poriyal hot, alongside a bowl of sambar and steamed rice for a complete South Indian meal.
