Instructions
-
Prepare the Batter
Begin by placing the idli dosa batter in a mixing bowl. Add the rice rava, powdered jaggery, freshly grated coconut, cardamom powder, and salt to the batter. Mix everything thoroughly using a ladle. -
Adjust Consistency
Gradually add water to the mixture to achieve a thick batter consistency. Allow the batter to rest for about 5 minutes. After resting, mix again. If necessary, add a little more water to adjust the consistency. -
Heat the Paniyaram Pan
Preheat a paniyaram pan and add a little oil to each of the holes. Once the pan is sufficiently heated, pour the prepared batter into each of the holes, filling them about three-quarters full. -
Cook the Paniyarams
Cover the pan with a lid and reduce the flame to low. Let the paniyarams cook for 5-7 minutes until the bottom turns golden brown. Carefully flip the paniyaram to the other side using a spoon and cook until both sides are golden and crispy. -
Serve
Once the paniyarams are cooked, remove them from the pan and arrange them on a serving plate. Serve hot, and for an authentic experience, pair with a cup of traditional South Indian filter coffee.
Tips
- You can also add a little ghee (clarified butter) for an extra rich flavor while cooking the paniyarams.
- Adjust the sweetness according to your preference by varying the amount of jaggery.
- Serve with a side of chutney or sambar for a complete South Indian meal.
Chettinad Sweet Paniyaram is best enjoyed immediately while it’s still warm, making it a perfect treat for a cozy tea-time or breakfast break. The combination of jaggery’s sweetness and cardamom’s fragrance will surely make this dish a family favorite!
