Diet: Vegetarian

Ingredients:

Ingredient Quantity
Whole Wheat Flour 1 cup
Water 1 cup
Caster Sugar 1 cup
Lemon Juice 1 tablespoon
Oil 1 tablespoon
Turmeric Powder (Haldi) A pinch
Baking Powder 1/2 teaspoon
Baking Soda 1/4 teaspoon
Sultana Raisins Black, for garnishing

Preparation Time: 10 minutes

Cooking Time: 20 minutes

Total Time: 30 minutes

Instructions:

  1. Preheat the Oven:
Start by preheating your microwave (or conventional oven) to 180ยฐC (350ยฐF) to ensure it reaches the perfect temperature while you prepare the batter.

  2. Mix Wet Ingredients:
In a medium-sized mixing bowl, combine water, caster sugar, turmeric powder, and lemon juice. Whisk them together until the sugar is dissolved and the mixture is smooth.

  3. Combine Dry Ingredients:
In a separate bowl, sift the whole wheat flour, baking powder, and baking soda together to ensure even distribution and remove any lumps.

  4. Mix Wet and Dry Ingredients:
Gradually add the dry flour mixture in two batches to the wet mixture. Stir gently until everything is well combined, being careful not to over-mix.

  5. Prepare Cupcake Molds:
Line your cupcake tray with cupcake liners. Then, carefully pour the batter into each liner, filling them about 3/4 full to allow space for the cupcakes to rise.

  6. Bake the Cupcakes:
Place the cupcake tray in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. The cupcakes should be golden and slightly springy to the touch.

  7. Cool and Garnish:
Once baked, remove the cupcakes from the oven and allow them to cool slightly. Garnish with black sultana raisins on top for a pop of color and added sweetness.

  8. Serve and Enjoy:
Your Healthy Lemon Cupcakes are now ready to serve! They pair wonderfully with a warm cup of Masala Chai for a refreshing tea-time treat or can be packed in your kids’ snack box for a delightful weekday surprise.

These cupcakes are a healthier alternative to traditional desserts and make for a perfect, guilt-free treat. Enjoy the zest and freshness of lemon in every bite, knowing that youโ€™re indulging in something nutritious as well as delicious.
