Ingredients:

Ash gourd 250 grams, sliced lengthwise
Drumstick 2, sliced lengthwise
Carrot 2, sliced lengthwise
Green beans 10, sliced lengthwise
Raw banana 1, peeled and sliced lengthwise
Potato 2, peeled and sliced lengthwise
Sweet potatoes 250 grams, peeled and sliced

For Coconut Gravy:

Ingredient Quantity
Coconut (grated) 1 ½ cups
Green chilies 3
Curry leaves 1 sprig
Cumin seeds 1 tsp
Coconut oil 1 tbsp
Salt To taste

Preparation Time: 30 minutes

Cooking Time: 45 minutes


Instructions:

  1. Steam the Vegetables:

    • Begin by preparing the vegetables. Cut the ash gourd, drumstick, carrot, green beans, raw banana, potato, and sweet potato into long slices.
    • Place all the vegetables in a pressure cooker along with a pinch of salt and ¼ cup of water. Cook for 2 whistles, then lower the flame and allow it to cook for an additional 3-4 minutes.
    • Once the pressure has been released, place the cooker under cold water to help release any remaining steam. Set the vegetables aside.
  2. Prepare the Coconut Gravy:

    • In a mixer grinder, combine grated coconut, green chilies, cumin seeds, and curry leaves. Add some hot water and grind into a smooth paste.
  3. Combine the Gravy with Vegetables:

    • Now, add the prepared coconut paste to the steamed vegetables. Stir to combine thoroughly, making sure the vegetables are well coated with the coconut mixture.
  4. Final Touch:

    • Drizzle 1 tsp of coconut oil over the dish and add salt to taste. Mix well to incorporate all the flavors.
  5. Serving:

    • Serve Kerala Avial with Keerai Sambar and steamed rice for a complete, satisfying meal.
