Green peas (boiled and mashed) 1/4 cup
Paneer (crumbled) 1 cup
Fresh coriander (chopped) A handful
Red chili powder 1 tsp
Turmeric powder (Haldi) 1/2 tsp
Star anise 1
Coriander powder 1 tsp
Garam masala powder 1/2 tsp

Instructions

  1. Heat the oil: Begin by heating some oil in a deep pan or kadhai. Once hot, add cumin seeds (jeera), mustard seeds (rai), bay leaf (tej patta), dried red chili, cloves (laung), large cardamom (badi elaichi), and cardamom (elaichi). Allow these spices to sizzle for about 15 seconds.

  2. Sauté the onion: Add finely chopped onion to the pan and sauté it until it becomes soft and translucent.

  3. Add ginger and garlic paste: Once the onions are soft, add the ginger and garlic paste. Cook for about 2 minutes, allowing the flavors to blend.

  4. Add tomatoes and tomato puree: Now, add chopped tomatoes and tomato puree to the pan. Cover and let it cook for 3-4 minutes to soften.

  5. Add the spices: Sprinkle red chili powder, turmeric powder (haldi), coriander powder, garam masala, and salt into the pan. Stir well and let the spices cook for 5 minutes, allowing them to release their aroma and blend into the gravy.

  6. Add paneer and water: Add crumbled paneer to the pan along with some water to adjust the consistency of the gravy. Mix everything together, then cover and cook for 6-8 minutes on medium heat.

  7. Add boiled and mashed green peas: Once the paneer is cooked, add the boiled and mashed green peas to the gravy. Mix well and cover the pan. Let it cook for another 3-5 minutes.

  8. Garnish and serve: Once the dish is ready, turn off the heat. Garnish with freshly chopped coriander leaves. Serve the Paneer Bhurji Gravy with Palak Raita and Tawa Paratha for a delicious and satisfying dinner.
