Hung curd 2 tablespoons
Salt To taste

Instructions

  1. Prepare the Cucumber: Start by peeling and chopping the cucumbers into small pieces. Place the chopped cucumber in a saucepan along with 1/2 cup of water and salt. Cook it on medium heat until the cucumber softens, which should take about 10 minutes.

  2. Make the Spice Paste: In a mixer grinder, combine the coconut, chopped ginger, green chilies, mustard seeds, coriander leaves, and turmeric powder. Add a little water to help grind the mixture into a smooth paste. If needed, add more water to achieve a creamy consistency.

  3. Combine and Cook: Once the cucumber is cooked and soft, add the freshly ground paste to the pan. Stir it well and let it cook for 2 to 3 minutes, allowing the flavors to meld together.

  4. Add the Hung Curd: Reduce the heat and add the hung curd to the curry, mixing it gently. This will give the Mor Kuzhambu its creamy texture and tangy flavor. Adjust the salt as needed.

  5. Serve: Serve this delicious Cucumber Mor Kuzhambu hot with steamed rice. For a complete South Indian meal, pair it with Beetroot Thoran (a spiced beetroot stir-fry) on the side.
