Mushroom Methi Brown Rice Recipe: A Healthy and Delicious Indian Rice Dish

Button mushrooms 1 cup, thinly sliced
Fenugreek leaves (Methi) 1 cup, chopped
Onion 2, finely chopped
Tomatoes 2, finely chopped
Green chilies 3, chopped
Garlic 5 cloves, finely chopped
Red chili powder 1 tsp
Coriander powder 2 tsp
Turmeric powder ½ tsp
Salt To taste

Instructions:

  1. Preparing the Brown Rice:

    • Begin by washing the brown rice thoroughly. Soak the rice in water for about 30 minutes to allow it to soften. After 30 minutes, drain the water and set the rice aside.
    • In a pressure cooker, add the soaked brown rice along with 2 ½ cups of water. Cook it for 2 whistles on medium heat, then remove from the heat and allow it to rest.
  2. Cooking the Vegetables:

    • Heat 2 tablespoons of oil in a pan or wok. Add the finely chopped garlic and sauté for about 1 minute until it releases its aroma.
    • Add the chopped onions and green chilies, and sauté them until the onions become soft and translucent.
    • Add the chopped tomatoes and cook for about 3-4 minutes, until they soften and blend into the mixture.
  3. Spices and Mushrooms:

    • Once the tomatoes are softened, add the red chili powder, turmeric powder, coriander powder, and salt. Stir well and let it cook for another 2 minutes to bring out the flavors of the spices.
    • Add the sliced mushrooms and cook them for about 2-3 minutes until they soften and release their juices.
  4. Adding Fenugreek:

    • Now, add the chopped fenugreek leaves (methi) to the mixture. Cook for another 3 minutes, allowing the methi to wilt and blend with the mushrooms.
  5. Combining the Rice and Vegetables:

    • Once the mushrooms and fenugreek are cooked, gently add the cooked brown rice to the pan. Mix everything together so the rice is evenly coated with the spices and vegetables.
    • Taste and adjust the salt, if necessary.
  6. Serving:

    • Serve the Mushroom Methi Brown Rice hot with a side of tomato-cucumber-onion raita and papad for a wholesome and satisfying meal.

Tips:

  • You can adjust the spice levels according to your preference by increasing or decreasing the amount of green chilies and red chili powder.
  • For a richer flavor, you can add a pinch of garam masala towards the end of cooking.
  • This recipe can also be made with white rice or basmati rice if preferred, though brown rice adds an extra nutritional boost.
